REM — Restaurant, Rooftop, Bar
The guide was updated:REM delivers Amsterdam’s most theatrical dinner with a side of skyline views. Perched 22 metres above the IJ River in a repurposed 1960s pirate radio tower, this restaurant swaps rebel broadcasts for refined European tasting menus (5 or 7 courses) starring hyperlocal ingredients. Dishes like sea bass with foraged herbs or aged-Gouda soufflés arrive at a leisurely pace, encouraging guests to savour both flavours and the panoramic cityscape.
The industrial-chic interior preserves the tower’s steel skeleton, while the rooftop — outfitted with hammocks and a cocktail bar — invites post-meal lounging. Book for sunset when the water below mirrors the tower’s red-and-white stripes.

Kaagman & Kortekaas
Kaagman & Kortekaas elevates the Parisian-style bistro with an open kitchen theatre and rigorously seasonal menu. Chefs Giel Kaagman and Bram Kortekaas craft dishes like venison with smoked beetroot or duck paired with unexpected ferments, all served in a renovated space that marries rustic charm with sleek efficiency. Walk-ins can perch at the bar for oysters and natural wines (the cellar holds over 1,000 bottles, spotlighting lesser-known regions), while reservations secure the full tasting experience.
Post-renovation, the addition of Basemen — their in-house bakery — means sourdough arrives still warm. The soul of the business remains unchanged: impeccable service, bold flavours and a 9:30pm kitchen curfew. It’s the sort of place where wild ingredients shine, and even the butter (house-churned, of course) feels revelatory.
