Wangjia is an old restaurant that may even appear somewhat shabby to the onlooker, but you can tell that it's good by the long waiting line outside the restaurant. The wonton here is slightly bigger than usual, giving it an extra chewy texture. The chef boils hundreds of wontons at a time, his moves are clean and sharp, which makes the cooking process a beautiful performance.
